Hot Herbal Peach

Peach juice mixes well with herbs, especially basil―add a large sprig with the leaves attached. The chartreuse reinforces the herbal flavours.




4 cups peach juice
20 large basil leaves
4 oz peach schnapps
2 oz chartreuse

Place the juice and basil in a saucepan and bring to a boil over high heat, then lower the heat and simmer for 10 minutes. Remove the basil leaves and add the schnapps and chartreuse and serve immediately or keep warm. Garnish with a peach slice and/or basil leaves.
