Carlos Fuenmayor launched SABROSITO* to do what
he loves to do best – Latino cooking for small groups of
foodies and their friends.
A Venezuelan native and Canadian citizen since 1995,
Carlos is a graduate of Ottawa’s Cordon Bleu Paris Cooking
School. He has been honing an expansive repertoire in fine
dining for over 14 years.
Carlos has won numerous accolades as Executive Chef of
The Laurentian Room and Xango. He has also taken his
place on such distinguished brigades as Sen5es and, in
Ottawa, Café Henry Burger and Domus.
Although his foundation training is classical French, Carlos
is equally strong in Pan-Asian, Italian and Fresh Market
cuisines. Since 1999, his focus and passion have been
Latino cuisine, which he calls “Cocina de las Americas,”
pertaining to how the cuisine covers two continents and one
subcontinent.
What makes the cuisine so exciting for Carlos is its
fascinating range of influences that have evolved this
cuisine. Latino cooking has dipped its spoon in the culinary
heritage of Europe, the Caribbean, Asia and Africa.
*Spanish for “Mmmm. Wow. That’s good!”
