Roasted White Fish in Banana Leaves with Crisp Golden Plantains
Ingredients
6 x 6-8 oz portion of white fish (Grouper, halibut, cod)
6 tbsp olive oil divided
1 banana leaf
Salt and pepper
2 tbsp Worcestershire Sauce, divided
2 tbsp Tabasco, divided
Juice of 1 lime
1 jar mango chutney
Plantains
Directions
Sauté fish on one side in a hot pan with 2 tbsp olive oil.
Cut a large piece of the banana leaf from the stalk and wipe clean. Place a piece of fish in the middle of the top side of the leaf and sprinkle with salt, pepper, Worcestershire, Tabasco, olive oil and lime juice. Wrap leaf around the fish, being careful to seal in the juices. Repeat x 6.
Barbeque the packets of fish directly on a medium grill for 10 to 15 minutes.
Peel and slice plantains and wipe with 2 tbsp olive oil. Grill until golden brown and crisp.
Serve the packet of fish with plantains and mango chutney.
